4 Servings


3 –Medium, Zucchini’s

8 ounces –Cream

Cheese, softened

1/2 cup –Marinated

Artichoke Hearts

1 cup –Fresh / Frozen


1 cup –Shredded

Mozzarella Cheese

1/2 cup –Shredded

Parmesan Cheese

1 teaspoon –minced garlic

1/4 teaspoon –cayenne


1/4 teaspoon –black


1/4 teaspoon –Pink

Himalayan salt

6 slices –un-cured bacon


1/2 pound –Un-cased

mild Italian Sausage​


  1. Prepare the Cheese Mixture and set aside.
  2. Pre-heat oven to 350*F
  3. Remove the seedy centers with either a spoon or an ice cream scooper. The scooper works the best for me!
  4. Then transfer these onto a parchment lined baking sheet or dish.
  5. Now you can bake these at 350*F for 25 to 30 minutes or until the zucchini is tender and the tops are browned

Instructions If Using Sausage

  1. Cook the un-cased sausage and drain the oils.
  2. Add sausage to the cheese mixture.
  3. Spoon cheese mixture onto Zucchini’s

Instructions If Using Bacon

  1. Spoon cheese mixture onto Zucchini’s
  2. Either wrap a slice of bacon around the zucchini or just place it on top. Both work just fine
