Au Gratin

10 Servings


1 1/2 Pounds –


1 Cup – Heavy Cream

2 Tbsp – Chives or Red 

Onions, chopped

2 Tbsp – Minced Garlic

3/4 Cup – Gruyére Cheese

1/2 tsp – Pink Himalayan Salt

(you can eliminate 

this as Cheese is salty)

1/2 tsp – Black Pepper

2/8 tsp – Nutmeg

1 Cup – Grated

Parmesan Cheese



  1. Pre-heat oven to 350*F. Move rack to the center of your oven.
  2. Spray non-stick spray onto your baking dish or a deep dish. 
  3. Slice the zucchini into 1/2″ slices and transfer them to your greased baking dish.
  4. In a small pot bring to a boil the heavy whipping cream, garlic, salt, pepper, nutmeg, gruyére cheese and 1/2 of the grated parmesan. Stir to combine. 
  5. Once boiling, reduce to a simmer and cook until all cheese is melted. 
  6. Pour over zucchini as evenly as possible. 
  7. Sprinkle the remaining cheese on top.
  8. Bake for 30-35 minutes or until Zucchini is for tender and top is browned. 
  9. Allow to cool 10 minutes before serving.
