Sonia's Stuffed
Meatballs

36 HUGE Meatballs

Ingredients

2 Pounds – Ground Beef

1 Pound – Ground Pork

1 Pound – Un-cased

Mild Italian Sausage

1/2 – Small Red Onion,

Chopped

1/2 Tbsp – Dried

Oregano

1 Tbsp – Dried Basil

1 Tbsp – Dried Parsley

1 Tbsp – Minced Garlic

6 – Mozzarella Cheese

Instructions

  1. Chop the onion and set aside.
  2. In a large bowl add the ground pork, ground beef and uncased Italian sausage. You could also use the ground chicken and turkey if you desire. 
  3. In a small bowl combine the eggs, oregano, basil and parsley. Mix together until combined and set aside.
  4. Season the meats with salt and black pepper to your taste.
  5. Add chopped onions. Mix together until combined.
  6. Pour the egg mixture over the meat and mix together until combined.
  7. Add minced garlic and mix together until combined. You could add this with the egg mixture, I forgot to do it at this step. 
  8. Line a cookie sheet with parchment paper and set it aside. 
  9. Cut the cheese sticks into pieces that measure approximately 1/2” to 1”. Or you can use 1/2 cup to 1 cup of shredded parmesan cheese added to your meat mixture.
  10. With an ice cream scoop, scoop up meat, add the mozzarella piece and roll into a ball. Then transfer it to your lined baking sheet. Repeat until all of the meat is used up. 
  11. Bake at 375* for 10-20 minutes or until cooked thoroughly.
