Shrimp Scampi

6 Servings

Ingredients

1 pound –peeled &

deveined Extra Large

Shrimp

6 –juiced lemons

1/2 medium –chopped

red onion

1/4 Cup –grated

parmesan cheese

1/4 Cup –Olive oil

2 Tablespoons –minced

garlic

1 Stick –butter

1/4 Cup –parsley

1/2 Tablespoon –oregano

1 teaspoon –salt

1/2 teaspoon –ground

black pepper

Instructions

  1. In a pan over medium heat, sauté onions and garlic in butter until onions are translucent.
  2. Add the following: olive oil, herbs and lemon juice. Stir until combined.
  3. Add the following: salt, pepper, cheese and shrimp. Stir until combined.
  4. Simmer until the shrimp are a vibrant pink. Approximately 5-6 minutes max. If you see the tails starting to curl, remove from heat.
