Puerto Rican Red Radish ‘Potato’ Salad

2 Servings

Ingredients

1 cup–baby red radishes

(cut into halves or

quarters)

1 Tbsp –mayo

1/4 cup –green bell

peppers (chopped)

1/4 cup –small red

onion (chopped)

1 –hard boiled egg (chopped)

2 Tbsp –olives (chopped)

Salt & pepper to your taste 

***1 Bunch = about 12

radishes = 1 cup***

Instructions

  1. Peel the radish and cut into halves or quarters.
  2. Boil in salted water until fork tender. 
  3. Drain and set aside to cool.
  4. Add all the above ingredients and mix well.
  5. Now you are ready to serve!
