Puerto Rican Daikon ‘Potato’ Salad

Ingredients

1 pound –daikon Radish

4 Tbsp –mayo

1/4 cup –green bell

peppers (chopped)

1/4 cup –small red

onion (chopped)

2 –hard boiled egg (chopped)

2 Tbsp –olives (chopped)

Salt & pepper to taste 

Instructions

  1. Peel the daikon radish and cut into quarters.
  2. Boil in salted water until fork tender. 
  3. Drain and set aside to cool.
  4. Add all the above ingredients and mix well.
  5. Now you are ready to serve!
