‘Potato’ Salad with a Twist —Red Radish

2 Servings

Ingredients

1 cup –baby red

radishes (cut into halves

or quarters)

1 Tbsp –mayo with olive oil

2 strips –bacon

(coarsely chopped)

2 Tbsp –gorgonzola

crumbles

1 Tbsp –green onions

(chopped)

Instructions

  1. Peel the radish and cut into halves or quarters.
  2. Boil in salted water until fork tender. 
  3. Drain and set aside to cool.
  4. Add all the above ingredients and mix well.
  5. Now you are ready to serve!
