Meat Sauce

12 Servings


1 pound– Ground beef /

Ground turkey

1 pound– Un-Cased

Mild/Hot Italian


1 Tablespoon– Sofrito (

recipe ).

1 teaspoon– Dominican

Oregano (or whatever

oregano you have


1 teaspoon– black pepper

Salt to your taste

1 (24 ounce) container–

Your Favorite Low-Carb

Spaghetti Sauce

1 (28 ounce) can–

Organic Crushed


Coconut, Avocado or

Olive oil — non-stick


Zucchini’s — 1 per

person you are feeding


  1.  Pre-heat your oven to 375*F
  2. Make sure your pork tenderloin is brought to room temperature. Transfer your tenderloins to a baking dish.
  3.  In a small bowl combine the following: lemon juice, minced garlic, salt, black pepper, olive oil and oregano. Stir until well combined.
  4.  Pour mixture over the pork tenderloin. Try to cover all sides.
  5.  Allow to sit and marinate for 20-30 minutes. Overnight is soooo much better!
  6.  Drain the excess juices. The tenderloin will release it’s own juices.
  7.  Bake at 375*F for 35-45 minutes. Baste the meat with it’s own juices.
  8.  Check the temperature to ensure it is cooked thoroughly. Perfect temperature for pork is 170*F.
  9.  In my case, I had to return it to the oven and bake it another 20 minutes. Every oven is different and varies with the temperature.
  10.  Broil on High for 5 minutes or until golden brown.

Tips / Suggestions

  • Remember to stir your meat sauce frequently.
  • Do not over-cook your noodles or they will turn to mush.
  • Freeze the un-used portion once it has cooled down. This is great to have on hand for those crazy weeknights !
