Cod In Red Pepper Sauce

8 Servings


2 lbs – Fresh or Frozen

Cod Filets

12 ounces – Roasted Red


2 Tbsp (6 Cloves) –

Minced Garlic

2 – Fresh Basil Leaves

2 Tbsp – Olive Oil

(avocado or coconut oil

are great to use as well)

1 1/4 Cup – Heavy

Whipping Cream

1/4 Cup – Grated

Parmesan Cheese

Pink Himalayan Salt to

your taste

Black Pepper to your taste


  1. Move oven rack to the center of the oven.
  2. Pre-heat oven to 300*F
  3. In a deep baking dish, place the cod filets with space in between each. Season with salt and black pepper to your taste and set aside.
  4. In a blender or food processor, blend together the following: Oil, basil leaves, roasted peppers, garlic, heavy whipping cream and parmesan cheese. Blend until smooth.
  5. Pour this amazing sauce over your Cod filets. Make sure that each filet is covered in this yummy sauce.
  6. Now, you can bake on the center rack until the flesh is opaque throughout and flakes easily when pressed with a fork.
  7. This will take approximately 25-35 minutes. Remember to always check at midpoint, as all oven are calibrated differently.
  8. Once cooked, allow to cool for 5-10 minutes before serving.
