Chicken Skewers

12 – 14 Servings

Ingredients

Bamboo Skewers /

Wooden Skewers

2 pounds —boneless,

skinless chicken (can be

breasts or thighs),

cut into cubes / 1” chunks

1 medium —Zucchini

cut into chunks

1 Small —Green bell

pepper cut into chunks

Orion Marinade

1 medium —white

onion, roughly chopped

1 cup —fresh parsley,

roughly chopped

Juice of 2 Lemons / 3

Tablespoons of lemon

juice 

 ***1/4 cup of Olive oil /

Coconut oil

3 —Garlic cloves

1 Tablespoon —Pink

Himalayan Salt

Instructions

  1. Combine the following items into a blender/ food processor: onions, parsley, lemon juice, salt, olive oil and garlic.
  2. Blend until a smooth pureé. The consistency you are wanting is as thick as a milk shake. (add water if needed).
  3. Transfer chicken to a bowl / zip lock bag. Pour the marinade over the chicken, seal and shake vigorously.
  4. Allow the chicken to marinate 2 to 4 hours or overnight. The longer the better.
  5. When ready to broil. Add the chicken and veggies to the skewers. Alternating protein and veggies.
  6. Broil on high 20 minutes or until browned.
  7. Turn over and cooke another 15 to 20 minutes or until Browned.







Tips / Suggestions

  • PROTEIN & VEGGIES IN LESS THAN 30 MINUTES!
  • Make the marinade ahead and refrigerate it until you are ready to use it!
