Cheesecake Popsicles - Strawberry & Blueberry

Ingredients

Strawberry Mixture

1 cup —Chopped

strawberries (fresh or

frozen)

2 Tablespoons —Butter,

melted

16 ounces —Full Fat

Cream Cheese, softened

1/2 cup —Heavy

Whipping Cream

Lemon Juice —Juice of

2 Lemons or 4

Tablespoons

1/2 cup —Swerve / Your

favorite sugar

substitute

4 teaspoons —Vanilla

Extract

***OPTIONAL— 1/2

cup chopped

strawberries to be added

for chunks of

strawberries in the

popsicle!– not included

in macros calculation

Blueberry Mixture

1 cup —Fresh/frozen

Blueberries

2 Tablespoons —Butter,

melted

16 ounces —Full Fat

Cream Cheese, softened

1/2 cup —Heavy

Whipping Cream

Lemon Juice —Juice of

2 Lemons or 4 tablespoons

1/2 cup —Swerve / Your

favorite sugar

substitute

4 teaspoons —Vanilla Extract

Instructions

  1. Combine all ingredients into a blender or kitchen aid. Mix until smooth.
  2. (strawberry popsicles) fold in the additional strawberries.
  3. Pour mixture into your molds.
  4. Do not completely fill to the top. You must leave room for the cover.
  5. Freeze for 3 hours or overnight.
