Blueberry Bagels

6 Bagels

Ingredients

Coconut oil spray

300g —shredded mozzarella

1 —egg, beaten

2 ounces —unflavored

whey protein

3 tablespoons —cream

cheese

4 tablespoons —butter,

melted

1/2 tablespoon —baking

powder

1/2 cup —fresh / frozen

blueberries

1/4 cup —Stevia /

Swerve (your

preference) I forgot to

add this on camera

2 teaspoons —Vanilla extract

Instructions

  1. Pre-heat oven to 375*F
  2. In a microwave safe bowl, microwave the butter, mozzarella cheese and cream cheese. Heat in 15-20 second intervals and mix until well combined.
  3. Add egg, vanilla extract, swerve, whey protein and baking powder.
  4. Mix until well incorporated.
  5. Fold in the blueberries until well combined.
  6. Spray the mold with non-stick spray (optional).
  7. Fill the mold with the cheese mixture. Do not fill to the top as these will rise. 
  8. Bake 15 to 18 minutes or until golden brown.
