Ingredients

3 cups — Un-sweetened,

Organic Coconut Flakes

1/2 cup — Sonia’s Baking Mix

4 Large — Egg Yolks, beaten

1 cup — Brown Sugar

Substitute (our favorite

is Sukrin Gold) 

1/4 cup — butter, melted

1 Tbsp — Coconut Extract

1 Tbsp — Vanilla Extract​

Instructions

  1. Pre-heat the oven to 350*F
  2. Grease a cookie sheet or use parchment paper or the silicone mat. 
  3. In a large bowl combine all ingredients and mix well until a sticky dough forms. 
  4. Make 24 uniform balls and place them on the baking sheet. 
  5. Bake for 20-25 minutes or until golden brown.
  6. Allow to cool for 10 minutes before serving.
